Each year, more than 300,000 tons are grown on ropes, which stretch off the shoreline into the shallows. The seaweed is pressed into sheets and dried. It used to be done by hand, but is now a mechanised process, which often includes toasting as the final step - to introduce a delicate, nutty aroma to the nori sheets.
